One of our solutions to make everyday coffee still taste good without being specialty grade is this release. We manually sorted the defects of this harvest post-roast and profiled it to fit the notes people generally look for in an everyday cup.

Though we make less by doing this, we believe it is an important avenue for conversations that can lead to action.

ABOUT THE PRODUCER

Similar in values, KALSADA focuses not only on how to make coffee better alone, but also on how to make its value honest. For too long, Filipino farmers have been romanticized for resilience while being priced out of dignity. KALSADA sat in backyards and barangay halls, in between rows of drying beds and handwritten ledgers, and listened until the stories became a map.

Kalsada was built from that map: from trust earned slowly, from partnerships that feel less like contracts and more like shared breaths. We source from them because they invest in what matters: equipment that lifts quality, systems that reward skill, wages that respect time and care.

Every bag we roast is part of a long conversation between craft and community, between what coffee is and what it could mean. We refuse to romanticize struggle and are here to make sure hard work leads toward fairness, sustainability, and a future where young Filipinos can see coffee not as an inheritance alone, but as a possibility. This is why we trust KALSADA as a producer, and we’ve seen their work even before we became professionals working in coffee, as well.

KALSADA’s work is simple, though never easy: to tell the world that Philippine specialty coffee has always been here, waiting to be seen, understood, and shared.

ABOUT THE ORIGIN

The first fruity local coffee we’ve tasted was a harvest from Pigtauranan, Bukidnon, in 2019, processed and roasted by KALSADA, when they were still running a roastery and cafe. This was why this origin has deeper roots for us and also why we were willing to believe in its potential, even if we knew it wouldn’t be specialty grade yet.

KALSADA’s story in Bukidnon began in 2018, though “begin” is never quite the right word. In truth, it started with failure: a first attempt at building a partner community in Mindanao that did not hold. Sometimes the soil resists you. Sometimes, it asks that you learn its language first.

By 2020, KALSADA tried again. This time, the rhythm was slower, humbler, steadier. In three years, what began as a handful of conversations became a living network of 114 farmer-families. Together, they built what is now the Pigtauranan mill, where both specialty arabica and fine robusta are processed, where cherries travel hours by road from neighboring Bukidnon towns, and sometimes even from Sultan Kudarat, six hours away.

Then, in early 2023, the world finally took notice. When Blue Bottle Coffee released its first Philippine offerings, they chose two lots from Sitio San Roque: a natural-processed Typica known simply as Sweet, and an anaerobic Catimor that carried the sun and persistence. To most, it was just another product launch. To KALSADA, it was five years of patience distilled into a cup: years of cupping tables, quality assessments, and quiet faith.

But the truest measure of this milestone was never the export or the acclaim. It was what happened afterward when families in Sitio San Roque began using their coffee earnings to endure the pandemic, to pay off long-standing debts, to breathe easier for the first time in a generation.

This is what specialty means to us. Not luxury, not rarity, but a kind of transformation, which we and KALSADA both root for: the slow, deliberate work of turning struggle into possibility, and coffee into a language of hope.
