In 2025, we got a batch of Pigtauranan Sitio San Roque Naturals from Kalsada Coffee. It was still not specialty grade at that point. We sorted it by hand — defect by defect, one by one — and launched it at #KapeCon anyway because we believed in what it was becoming. The reactions? People were surprised. Some were skeptical when we told them the grade. Then they tried it and the skepticism went somewhere else entirely.

That’s the thing about having faith in something before it’s ready. It makes the arrival feel like a shared win.

This year, it launches as specialty as it always had the potential to be: grown in Bukidnon by 114 farmer-families who built a mill together from scratch with Kalsada and sourced with the same patience Kalsada showed when Blue Bottle rejected their samples for 4 straight years before finally saying yes in 2023.

ABOUT THE PRODUCER

Similar in values, KALSADA focuses not only on how to make coffee better alone, but also on how to make its value honest. For too long, Filipino farmers have been romanticized for resilience while being priced out of dignity. KALSADA sat in backyards and barangay halls, in between rows of drying beds and handwritten ledgers, and listened until the stories became a map.

Kalsada was built from that map: from trust earned slowly, from partnerships that feel less like contracts and more like shared breaths. We source from them because they invest in what matters: equipment that lifts quality, systems that reward skill, wages that respect time and care. 

Every bag we roast is part of a long conversation between craft and community, between what coffee is and what it could mean. We refuse to romanticize struggle and are here to make sure hard work leads toward fairness, sustainability, and a future where young Filipinos can see coffee not as an inheritance alone, but as a possibility. This is why we trust KALSADA as a producer, and we’ve seen their work even before we became professionals working in coffee, as well.

KALSADA’s work is simple, though never easy: to tell the world that Philippine specialty coffee has always been here, waiting to be seen, understood, and shared.

ABOUT THE ORIGIN

In 2019, we tasted a coffee from Pigtauranan, Bukidnon that we couldn't quite explain. It was fruity and a little wild and not yet what anyone would call specialty. We weren't professionals yet either. Looking back, we were pretty well-matched.

We filed that cup somewhere in the back of our minds — the place where you keep things you haven't figured out how to love properly yet but know you will eventually.

Niadtong 2019, nakatilaw mi og kape gikan sa Pigtauranan, Bukidnon nga lisod pa namo ipasabut sa among kaugalingon. Fruity siya, medyo ihalas gamay, ug dili pa gyud mao ang tawgon sa kadaghanan nga specialty coffee. Kami pud mismo, dili pa mga propesyonal ato nga panahon. Kung hunahunaon namo karon, bagay ra gyud mi ato nga tasa.

Gitipigan namo ang maong panumduman sa usa ka dapit sa among huna-huna—kanang lugar diin ibutang nimo ang mga butang nga wala pa nimo nahibal-an unsaon paghigugma sa hustong paagi, apan kabalo ka nga moabot ra ang panahon nga masabtan nimo sila.

Pag-abot sa 2025, nakadawat mi og batch sa Pigtauranan Sitio San Roque Naturals gikan sa Kalsada. Dili pa gihapon kini specialty grade niadtong panahona. Busa among gisortihan matag depekto pinaagi sa kamot—usa-usa, hinay-hinay—ug gilansad gihapon namo kini sa #KapeCon tungod kay nagtuo mi sa kung unsa ang mahimo niini.

Ang mga reaksyon? Nalingaw mi sa pagkakita niini. Adunay nahibulong. Adunay medyo nagduhaduha sa dihang among gisulti ang grado sa kape. Apan sa dihang natilawan na nila, mura’g nangadto sa laing lugar ang ilang pagduhaduha.

Mao gyud tingali na ang mahitabo kung mutuo ka sa usa ka butang sa wala pa kini hingpit nga andam. Kung moabot na gyud ang iyang panahon, mura usab kini og kadaugan sa tanan nga naghulat.

Karong tuiga, nagbalik kini isip specialty coffee—sama sa potensyal nga dugay na niyang gidala. Gitubo kini sa Bukidnon pinaagi sa 114 ka pamilya nga mag-uuma nga nagtukod og ilang kaugalingong mill uban sa Kalsada gikan sa wala. Ug sama sa ilang pagpailob sa pagpalambo sa kalidad sa ilang kape, mao usab nga pagpailob ang gipakita sa Kalsada sa dihang gisalikway sa Blue Bottle ang ilang mga sample sulod sa upat ka tuig nga sunod-sunod, hangtod sa miingon usab og "oo" niadtong 2023.

Gusto namo nga mahibal-an ninyo kining tanan. Ang pag-sort sa kamot. Ang among gibati nga nagsugod pa niadtong 2019.
